At over 900 metres in Jaén, where the cold of the Sierra concentrates the fruit and sharpens the aroma.
Picual olives, picked in the first weeks of the harvest while they are still green. Less oil per fruit, but far more character: a vivid green, a noble bitterness and that pungency on the finish that reveals a true oil.
