Sierra Mágina, in the heart of Jaén, has its own PDO: a European mark that guarantees the origin, variety and quality of this mountain oil. Altitude, cold and sun produce a more aromatic, more balanced oil.

What sets AURO apart from supermarket olive oil?

Most oils on the shelf blend different varieties, harvests and origins. AURO is the opposite: single-variety 100% Picual, from a single estate in Sierra Mágina, early harvest and cold-extracted, with full traceability from tree to tin. The result is a high-quality extra virgin olive oil —intense, fruity and rich in antioxidants— well above average.

What is the "early harvest" and why does it matter?

It means harvesting the olives while still green, in October, weeks earlier than usual. You get less oil per olive but a far more complete one: maximum polyphenols (natural antioxidants), intense grassy aromas and that noble bitterness and pungency that distinguish a truly high-quality extra virgin olive oil. Quality over quantity.

Store it cool, dry and protected from direct light, and enjoy it ideally within a few weeks of opening the tin. To taste its full character, use it raw: over bread, vegetables, fish or as a finishing touch to your dishes.
