Tin vs Bottle: The Best Way to Store Extra Virgin Olive Oil

The packaging of olive oil is no small matter. It plays a part in how fresh, aromatic and healthy the oil is when it reaches you. At AURO we made a deliberate choice for the tin — here’s why.

Light is olive oil’s greatest enemy

Extra virgin olive oil is a fresh, living product. Its greatest enemy is not time itself, but light. UV radiation sets off a process that breaks down the precious aroma compounds and the polyphenols — the oil turns rancid and loses its character.

A clear glass bottle on the supermarket shelf is therefore just about the worst thing that can happen to a good oil. Even green or dark glass still lets some of the light through.

The tin: 100% light protection

The tin blocks light completely — not a single percent gets through. Together with an airtight seal, it also protects the oil from oxygen. The result: fruitiness, colour and polyphenols are preserved until you open the tin.

Better for the environment

The tin has another advantage: aluminium and tinplate are light and infinitely recyclable. It weighs less than glass, which lowers transport emissions, and can be recycled as a single, clean material stream.

How to store your oil properly all the same

  • Cool and dry, away from the stove and the window.
  • Use it up within a few months of opening.
  • Always seal it well.

Our La Lata is 100% Picual from an early harvest, cold-extracted and packed in the light-proof tin. That way the oil reaches you as alive as it was when it left the mill.
